I have been searching and reading on here all morning. It is endless in the knowledge people are sharing.

So I have read low and slow and I have read bump up the heat to 325. I want crispy skin so my thought was to do 225 degrees @ 30 minutes a lb. At around 150 degree breast temp bump up to 300-325 and crisp up skin. Sound ok? This will be my first smoked turkey and don't want to ruin the main meal for every one.

I cook the entire time @ 325 but it all depends on how MUCH smoke you want.

The lower themp will tend to make the skin drier/tougher.

Regardless of the way you go, make sure you apply some kind of treatment to the skin that has oil.

These are the times from the butterball page and they have served me well.
