Needed a beef fix real bad,too much pork on the fork lately.Bought a nice two bone Prime Rib and lathered it up with evoo and sprinkled with kosher salt and fresh cracked pepper.I fired up a huge chimney of Wicked Good lump and cooked this roast at 350-375 for an hour and a half,had a couple small blocks of cherry for a little extra flavor.Internal temp was 150......just right,plated up with some mashed taters and butter and fresh frozen beans out of my garden,and a big spoonful of hot horse radish.It was great.

Wow that looks good..... That is a beautiful "plate up", it's 6:00 AM and i'd sit down to that right now!
I really need to expand my horizons on the cooker, i have so many other things to try.
