Well, lack of decision on what to have for dinner brought out the food A.D.D. in me and this is what happened.

I went to the freezer to browse and the only thing that fell out and hit me on the big toe was some pulled pork. I'm not much on just plain reheated PP, so I gave it a little thought, but nothing else inspired me and so here is how it went.

I started off by caramelizing a couple onion and browning off a few sliced taters:

Then I started the layering. I puit a little shredded cheese in the bottom of the casserole dish then a layer of taters ( shook a little rub on them), then caramelized onions, followed by a layer of PP with a little sauce, then cheese.

Baked @ 375 for about 25 minutes, then added some more cheese. Ten minutes later, I added some french fried onions on top for a little crunch, and it looked like this when it came out of the oven:

We ate it with steamed broccoflower and sliced garden maters. I would've gotten some pix of the whole plate, but the Okette was already eating it.:roflmaoha0:

It was a spur of the moment thing, but it turne out really good. I think it will be repeated.

Wife made this tonight.. inspired by your recipe... I thought it was great.. we also had a similar type thing (pulled pork potato skins) at a restaurant once..

the key was that my picky 7yo asked for seconds Smile
