A week or so ago I had a craving for a fatty and headed to the store hungry. I wasn't sure what I was gonna put together but this is what I came home with.

Sausage, pepperoni, chorizo, bacon, sharp cheddar, thin sliced ham, pizza sauce, bread crumbs



Into the spice cupboard! I used some Big Ron's and a few other things.



Chopped a large onion.



Sausage, onion, spices, breadcrumbs in to the bowl!



Flattened out on some plastic wrap.



Added the ham.



Paint on the pizza sauce!



Added some pepperoni!



Then more sauce and the sharp cheddar!



Chorizo on top with more fresh onion.



I had a little ham & pepperoni left over, so on it went!



Some bread crumbs to absorb the "juices".



Rolled like a true fattie.



All sealed up with more Big Ron's!



More bread crumbs!



Bacon laid out to the length of the fatty.



A few slices to hold the filling in at the ends.



A perfect fit.



Ready to go!



Into the fridge to firm up while I start the smoker.



Into the smoke!



I was too hungry for a before-cut pic. Embarassed



Mmm!!!



Man that was a fattie to remember! Turned out really good. The pizza sauce added a good flavor.

I just can't do this one very often if I want to live past 50.

Forgot to ask - since all the inner stuff did not really need to cook, what was your total cook time and at what temp? I have not tried a fatty yet, but am sure its gonna be on the menu in the near future.

OwenStubbs - Thanks! I'm not positive about the time and temps as there were many a cold one had by Wolfs/It/Down and myself. Smile I think it went on around 1:30pm and it was on there 'till about 5:00ish. The temp was around 250-275*F. The inner most part, the chorizo, was actually raw sausage, so it was raw meat in the middle.

That's my best estimate (between the beers and the Beam) as he was actually helping me take care of some things before winter sets in, so I wasn't paying real close attention to it.

I haven't cared for fatties in the past.....but I think this one has CHANGED MY MIND!! Laughing Laughing

Only thing I might add to this is sauteed mushrooms and maybe sliced olives???
