This is my recipe.
When I use leftover butt I cube it up when it's still cold and scrape
all the jelled juices and fat in the pot, this will give it a smokey flavor.
Meat
1 med. or lg. chopped Onion
1 med. or lg. chopped Green bell pepper
1 lg. chopped Jalapeņo pepper
3 cloves minced Garlic
1 can Stewed tomatoes or 1 can Rotel tomatoes if you want it hot
4 to 6 cans Tomato sauce
1 or 2 sm. can Tomato paste
This is where it goes by taste, looks and how much you are making.
2 or 3 splashes of Worcestershire sauce
3 or 4 shakes of Cumin
A bunch of shakes of Chili powder
A few shakes of Red pepper unless you want it hotter
A bunch of shakes of Paprika its mostly for color
2 or 3 shakes of Garlic powder
2 or 3 shakes of Salt & pepper
3 fresh Cayenne peppers
1 to 2 tablespoon Sugar
Enough Water to get it boiling then to keep it simmering for hours. _________________ Got Fire?

Read the topic title & fully expected "Mrs. K.A.M." "Chili no beans" to be made with leftover brisket. Be`ins you all if from Texas.
Nice surprice! Will have to try it with pork. Looks great! |
