I was thinking about adding a few “Comfort Style” dishes suited for the colder weather, in addition to our current menu.
Southern Meatloaf or Mini Meatloafs
Cabbage Rolls
Split Pea Soup with Smoked Ham
Texas Chili
Irish Stew
Hot Chocolate?
to name a few, do any of you change your menu or add different items from time to time for seasonal reasons or is it pulled pork forever?
Sure if it works don’t change it, but it’s nice to change things up once in a blue moon or add something different for say a limited time?

I don't mean this at all as a put-down (unlike every post you make recently) but honestly how many events do you cater in Canada in the winter?
I mean let's get real here (as in really honest).
Not that your menu doesn't sound good (I like most of those items myself) but we cater BBQ.
Occasionally prime rib, steaks, a lobster bake here and there, sometimes we do shake it up a bit.
Oh yes, and canned beans of course! _________________ BBQMAN

I have found (and maybe because the name of my company has the word BBQ in it) that when people call to book an event (holiday or other wise) they want BARBECUE and barbecue related/traditional sides.
I do believe it is is good/great idea to offer your customers what ever sells. I also believe in the K.I.S.S method. You try and get too fancy/creative and you wind up not serving your customers well. |
I'm just thinking of a few add on's for winter vending & catering. I'm not looking at fancy per se. Our menu is all Bbq and we will keep it that way.
We will certainly retain the mainstay's..and maybe a few new items, bbq mind you..

Last winter we catered 3-4 gig's a month, hope to do much better this year with the new mobile kitchen with vending etc, yes Mic people do eat here and venture out in the snow, not all Canadians hightail it for Florida...
But if you're attempting another trolling ,you're using the wrong bait.. |

Interesting observation Marv...and if you hadn't included the quotes in your post, it would have been difficult to tell if it was directed at Louie or BBQMAN Sir.

| Back on track of the original post.. I make very good smoked meatloaf, it did not sell well. I think meatloaf and macoroni and cheese are only found in Furrs cafateria's or hospital lunch rooms at least down this way. We need to stay smoked/grilled and spiced to make the grade. |

Good...
Thats good to know, our mac and cheese goes over very well though. What do you think of a mini-meatloaf an individual size?
We were also thinking about a bbq version of a Cornish Pastie. It's like bbq beef and a dessert in the same pastry, it was an oldtime miners lunch. |

I feel that selling meatloaf can become a "mystery meat" sort of thing. I will steer clear for vending.
I was a very young soldier in 71 in San Antonio TX for training, I borrowed an ID (I was only 17) and went to a topless dance bar and was pasty whipped. It worked fine for me but I wonder about your winter weather?? |
