Can someone please explain the thermometer through a potatoe sitting on the grill grate, please?

You put a thermometer through a potato to monitor the temp of your pit, the potato keeps the probe off of the grates to get a more accurate temp of the pit

You can also save a taters life and use a block of hardwood with a hole drilled in it or a ball of aluminum foil.

It provides the temp at the grate as opposed to the internal temp of the meat being cooked.
