Thanks mwillis, Very Happy Correct on the egg, I boil them and then peal them and when the gumbo is simmering I put them in. They soak up the flavor and the next day is when they really taste good. Very Happy If I am doing one for just Debbie and myself I use the DO. But for a crowd I have a 6 gall. stainless pot I use.
