With fall coming on I had a hankering for a gumbo, so I fired up the WSM and smoked a chicken and then made little gumbo for Debbie and me.
Here is the bird seasoned up with Tony's on the WSM.


After 4hrs of smoke.


Boiling in the pot with the sausage.


My roux just before the Trinity.


Now we have a nice caramelized roux.


The gumbo simmering.


And a nice bowl of gumbo on a well not so wintery afternoon, 80+

I have never had gumbo. Embarassed Maybe I'll Google some recipes.

Kevin Dang that looked like a great meal.It is starting to freeze up here now,I think that Gumbo would hit the spot just need a little bigger bowl..Good looking meal.

Beautiful KAM...I've got a chicken on now, and I feel like I'm doing something wrong just eating it after I pull it off...I need some cold weather so I can start heating up the kitchen.

k.a.m. your gumbo looks great. I was just at Costco and was buying some chicken thinking "Man this would be good in some gumbo..." and viola! Gumbo! As always your meals look amazing!

Going to be in the 40's soon...now I have the inspiration to make some this weekend! Thanks for the post!

I was just talking to a guy at work yesterday about some chicken and sausage gumbo and even thought about smoking the chicken. Is that an egg in yours? Never done that before.

My problem is that when I make something like that I always make way too much.

Make too much = Eat too much
Our weather is sorta cool - highs in the high 70's to low 80's, lows around 55 or so, but wet. I am really getting sick of rain around here.
