My local grocery store had whole beef loins on sale for cheap so I got a couple and smoked one up for dinner.


folded the thin end over and tied it so it cooked even, rubbed it down with crushed onion soup mix.


Pulled at 135, let it rest for awhile and sliced it up. Served with some rye bread, fresh picked roasted pumpkin and coleslaw.

That looks great. Who don't love beef? Very Happy

Never had roasted pumpkin but it sounds interesting. How do you make it?

for the roasted pumkin I just get a small pie pumpkin, cut it in half. Clean out the seeds and pulp(save the seeds to roast them), add a little butter and brown sugar wrap each half in foil and bake oat 375 for about 2 hours or until it is soft all the way through.

Meat looks fantastic! Pumpkin sounds wonderful. Great pic! Any chance you have a pic of the pumpkin?

No sorry I did not get a pic of the pumpkin, still have 3 in the basement so next time I will. For those of you who have had acorn squash the taste is very similar.

Stuffed pumpkin is great to. cut the top off, scoop the seeds. Add some molasses to the cavity and soften for a couple of minutes in the microwave. stuff with cooked ground beef (with chopped onions, a little garlic, salt, pepper to taste), mashed taters and mixed veggies (like you are making a shepards pie.) place the top back on, cover in foil and cook in the oven at 325 until knife penetrates easily.

We place it whole on the table with the top askew (looks really good) and slice in wedges to serve.
