Alright I have got to put my 2 cents worth in. Started 3 chuck roast in my DO last night, gonna try and see if I can't make somebody hungry.
First, I floured and browned three boneless chucks:

That is my favorite piece of CI, btw a lodge 8 qt flat bottom dutch oven.
Next the onions and the "peanut butter roux":

Next, added the roast back to the pot after adding beef stock & water:

Then into the oven @ 250 overnight. Added 3 lbs baby carrots this am:

The DO is back in the oven all nice & cozy. Will serve with some smashed taters & whole kernal corn around lunch time today. Will post a plated pic if the family will wait 30 seconds to let me snap one.

I hope the family held off for the final plated shot! I can see where they might bite the hand with the camera if one waited too long to let them dig into that!

Peanut butter roux? Can we hear more about this?

The chuck roast(ss) just fell apart in the gravy. Served up with just plain old brown n' serve rolls....sure do need a good bread recipe for cast iron. Charlie peanut butter refers to the color/consistency of the roux, does not actually contain any peanut butter.
