| I have some japs that I just harvested and I want to make pepper jelly. Any of you have a good pepper jelly recipe? |

I second that request. I have requested a recipie in the past from an Ms. oldtimer but all I heard was something along the lines of blah, blah, but I'll have to kill ya!!!!

I found a couple.
This one came from Texas-Hunter over at Smoked-Meat.
Diablo Jalapeno Jelly
10 Jalapenos (stems & seeds removed)
2 med Bell peppers (stems & seeds removed)
1 1/2 cups Vinegar
6 cups Sugar
1/3 cup Lemon Juice
4 ounces Liquid Pectin
Green food coloring for more color (Opt)
Place peppers in a blender and puree... Combine the puree and vinegar, bring to a boil over high heat, and boil rapidly for 10 minutes, stirring occasionally... Remove the pan from the heat and stir in the sugar and lemon juice.. Return the pan to the heat, bring to a boil again, stir in the pectin and food coloring and boil again, stirring constantly for a minute.. Skim off the foam and bottle in sterilized jars. Makes around 6 1/2 pints...

Pepper Jelly
Start with japs, serranos, piquins, dynomites...what ever you want and what ever mix you have. I started with Japs, serranos, piquins, cherry bombs..
wash and seed all peppers ( i do not seed them, you might want to seed half)...
put in blender or processor...blend or chop(i like chunks and that is how grams does hers)
4 cups of peppers and juice
1 cup cider vinegar
5 cups sugar
1 box of sure jell (original fruit pectin)
put peppers in pot with juice and vinegar. stir pectin in to fruit (add 1/2 teaspoon of butter to reduce foam if needed) bring to a rolling boil stirring constantly. when boiling add sugar quickly and bring back to rolling boil. then boil for 1 minute. remove from heat and poor in to jars and either set upside down for 5 minutes or do a water bath. |
