I've been making some BBQ sauces with tomato sauce as a base, and the sauces taste great, except for a strong tomato aftertaste that kind of ruins all the goodness. The sauce doesn't taste tomato-ey going down or on the tongue, just the aftertaste. Is there a way to combat this?

When I cooked in the AF we used sugar to mellow out the tomato taste in foods. But that was a lot of years ago. I've heard using a dash of baking soda or butter to mellow out that aftertaste.

My dog licks his hindquarters after eating my bbq:) I assume this is to rid himself of the aftertaste.

When I make spaghetti or lasagna or anything with a large amount of tomato in it, I use sugar to take the "bite" out of the mater flavor. However, my sauce is really sweet anyway, so I don't think more sugar would cut it. If your sauce is a bit tangy, throw in some sugar. If your sauce is already sweet, I'm not sure what to tell you to do. Maybe do what someone else said and add baking soda or butter to it.

For some sh!ts and giggles, try using ketchup and cut the sugar in your recipe in half and see if you still get that after taste.

I always use ketchup and don't have that problem.
