This one is great, I get rave reviews for it every time I fix it...
Chocolate Eclair Cake
- 1 large package of instant vanilla pudding (mix it up and try different flavors, if ya want)
- 1 package (16 ounce) cool whip (or equivilant)
- 1 box of graham crackers
- 1 container of chocolate frosting (I prefer the milk chocolate one)
mix pudding according to directions on package. Fold in Cool whip.
begin layering graham crackers and pudding mixture in a square 9x9 baking pan (I use an aluminum one, easy to just toss it at the end), Beginning and ending with a layer of graham crackers. (you may need slightly more than a box, or slightly less, depending on how thick your layers are. also, dont worry about breaking them, as no one will see them.)
open the tub of icing, removing all the foil. microwave the icing for about one minute, just to soften it up a bit. spread evenly on top of the "cake". place in the fridge to set.
This recipe could also be adapted for sugar free or fat free diets... |
