hey all its been awhile but im heading back in for another smoke tomorrow (for the future in-laws this time so no pressure right lol) pulled out the chargriller still running with the basic mods i did before but i was having low/even/ constant temp issues i'll be using lump and hickory chunks again but i was considering putting a water-pan under the flipped charcoal tray that i use as a baffle to maybe help maintain the temp. i used to have a vertical brinkmann that had a water pan and temp was never an issue do you think this would help..... or have any other advise 8hrs till i fire it up

I have found that my chargriller is difficult to use, I always just build a small fire using all hickory in the farthest corner of the fire box then I spend my whole cook watching the smoke and playing with fire, If you watch it closely it works great but if you blink POOF you lose the fire. at i also think it prefers all splits and no lump just my 2 cents. GOod luck!!

yea im fighting it all right now put in some unlit lump and chunks in the basket and put a full lit chimney of lump on top got about 195 and had to get the ribs in. dropped down to 150ish waited a bit cause i know the ribs where cold and put a whole other chimney in burned good for 10 min or so and the fire just goes out. have the vent on the box wide open and i cant keep a fire to save my life sticking at around 165. got a ton of smoke just no heat. have another chimney going or briskets as a last resort gonna put in under my basket on the fire grate and hope

is the vent on the top of the cooking chamber wide open? and did you lower the vent inside? thats is a must for the CG's

yea the vent on the stack is wide open and i have flex pipe extending it down to the cooking surface
