So you start by criss crossing thick cut bacon to make a square. Then spread ground italian sausage over the bacon(about 1/4" to 1/2" thick). Next dice up some onions, bell peppers, jalapenos (no seeds!) and some cheese and spread them over the sausage. Now the tricky part! You roll this up so it kinda makes a spiral if your looking through it. After the roll wrap in foil but leave the ends open. Smoke at 225 for 2hr then take the foil off and smoke for about 1hr or until the bacon gets crispy. Slice it up into pieces about 1/2" thick and enjoy!!!

Whats the use of even smoking it if your going to wrap it in foil, might as well use the oven Rolling Eyes

I used the foil because the thing wants to fall apart. Once the meat cooks for a bit it will stay together. I am open for any other ideas.

Pin the bacon ends together into the fatty with toothpicks. I probably use 18+ picks on mine. And/or turn it seam side down. If the toothpicks burn off you will find them when slicing. YMMV

I just put them seam side down, and the bacon weave holds it together.

Being new to the ring, you might not be aware that Bacon Wrapped Things are quite common.. often called a "Fattie" here is a variety of styles http://www.thesmokering.com/forum/viewtopic.php?t=34438 More Fatties than should be displayed in one thread... Wink Wink Its advisable to place a grease bucket under your monitor before viewing.

Confused My gallbladder function being such as it is... I call Fatties "the thing that should not be" just like the Metallica song.. Next time I cook one it will be with turkey sausage... or a 'Healthy' but still wrapped in bacon.

Putting peppers in it sounds good.

I made one recently with cooked bacon and cheese inside. I don't use any foil when I cook them -- about 4 hours on briquettes.
