I've been going cold turkey for 3 weeks getting ready for Labor Day Weekend and the opening of college football. I'm kicking it off early by being of service to Mrs K.C. -----she loves her smoked turkey. She came home with a fresh (she'll never do frozen) 19.7 lb turkey and she informed me she had picked out a brine and has it brining as we speak. The brine is
2 gal water, 2 cups kosher salt, 1 cup sugar, 1/2 lb of fresh sliced jalapenos, 2 tbs crushed red pepper Shocked I opened up the fridge she has it brining in and just smelling it made my butt burn Laughing

So Wed is turkey and I'm doing trimmings from St Louis cuts for this weekends beans.

This weekend is going to include 4-6 slabs of SL cuts, 1 pork shoulder, 1 chuck, fresh meat market polish and italian sausage, big pot of dry navy beans going in the smoker as well. I'm fired up and ready to get the cooker going .....got a pile of apple for the turkey and will be pulling off the hickory pile for the weekend cook. Everyone have a fun, safe holiday weekend and don't forget to take pictures or it didn't happen.

Sounds like some good cooking happening this weekend k.c hawg and coyote.

I have been told my appointed place of duty this weekend is manning the smoker. Four slabs of St Louis style ribs, one 8.5 lb butt, a pot of six hour beans, ABTs (of course), and an apple crisp out of the dutch oven. And, I want to smoke some veggies to make salsa too. All this is just for Friday! Looking forward to the weekend. All the best Ringers. Keep doing what you do so well.

Chicken and chicken. Mrs. Nurse has to work the weekend so I'll practice on a bunch of chicken and take it to the hospital to feed those poor suckers er, I mean poor souls who have to work Laughing
God Bless those who work weekends and holidays for the public, nurses, police, fire, and soldiers to name a few.

Oh man I am like a kid on christmas morning waiting on labor day, I got a new smoker, and I am smokin a boston butt, 9 racks of BB Ribs, Beer can chicken(just gonna do one my first time) Some beans, gonna fix my wife and family some ABT's (I do not eat peppers so I am out of luck) and for dessert a big ol Chocolate delight, Man Im gettin hungry just thinking about it

I have class on Labor Day but I got 2 racks of spares for our Fantasy Football Draft on Friday. Maybe some ABT's and Beans too. Does anyone know of a good thread about Spares?

Spare ribs, brisket, leg quarters, a wild pig about 25 to 30 lbs., beans, and whatever else everyone wants we will cook. Very Happy We are cooking Sunday night and Monday.

8 slabs of BB, 2 6lb Butts. Second time smoking pork butts. Then some ABT's, jalapeņo cheddar corn bread, beans, baked potato salad, and lots of beer Very Happy

I will be fitting an 8 lb. butt, a 7-8 lb. packer, and a couple of spares on my new UDS. Plus all the sidekicks!

Will be the first cook on it so we'll see what happens.

Not sure what to expect....not many tropical storms have ever hit New Mexico????????????

3rd annual Labor Day party... today's shopping list included 6 bone in butts, 9 racks of baby backs, 2 fattie sausages, and 10 lbs of chicken wings..

my two little WSMs will be humming nicely on Friday nite into Saturday.

Competition weekend at Kewanee IL, braggin rights event, good time for all.

Roast pork entry: Whole pig (charcoal and hickory)
Ribs entry: Baby backs (either naked w/ pepper and/or TexMex rub of my own creation) apple smoked
Misc entry: Can't give it all away, it will be good!

Saturday morning: yardbird legs and wings on the UDS, BBQ and Buffalo, and chilling beer in preparation for my college gameday kickoff at 2:30 Very Happy

Sunday and Monday: it's still up in the air, but tomorrow we're hitting the meat sales and picking up pork spares, baby backs, brisket, butts, tri-tips, and some London broil.

I also intend to hit up Sam's Frida night and do some BBQ supply restocking (gloves, foils, etc).

Going to have options!

Only time I am going to be cooking is Thursday night. Cooking 2 fatties Very Happy

Might cook some dove Saturday or so. Dove season is on here, and I am out in the field all weekend long!

Saturday Late - 60 lbs pork butt, Moving into Sunday - 15 spare rib racks, some where around 75 ABTs and a few yard birds. Throwing in as much sausage as I can get made by Sunday. I'm just glad I don't have to buy the beer for this party Wink

A few weeks ago my I was talking with my cousin about cook outs and mentioned I'd like to cook some ribs up for labor day. She mentioned that she has the best recipe; "Take a crock pot...."

Bzzzzzt. I knew when she said that I had to get her over to the house and introduce her and her husband to the WSM.

So I got her and some friends comming over and I'm planning on smoking BBs and some fresh hot sausage. Also got the "Homer Simpson Potatoe Salad" (Mmmmmmm Bacon....Mmmmm Cheese.) and some other goodies on the menu.
