Hi all, I'm working on a Sweet n Spicey sauce. My first run came out spicey enough but not sweet enough. It was:
1 1/4 cup brown suga
1 cup ketchup
3/4 cup apple cider vinegar
1 tbsp cayenne
1 tbsp chili powder
1tsp onion powder
1 crushed and chopped garlic clove (bud)
What should I add for sweetness? Honey? Mo' suga? I'm gonna cut out the chili pepper and sub ground pepper next run. |

Just my two cents but I do like honey or molasses to add to the sweetness. I would not take the out the chili powder maybe reduce amount and ad a bit of ginger powder. The ginger is a nice flavor with sweet and spicey. _________________ can't drink all day if you don't start in the morning! |

I usually use a little honey and/or a little molasses. Stronger on the honey if I want it sweeter without messing with any other flavor, as sometimes I think the molasses can screw with a perfect taste.
That's just my 2 cents. |

Cut the brown sugar to 3/4 cup add 1/2 cup white sugar and 1tsp salt. The salt will enhance the sweetness. White cane sugar has a sweeter taste than brown sugar. _________________ Never met a cow that I didn't like with a little salt and pepper.

I like Balsamic vinegar, as it is sweet and tangy already. It also enhances the brown color of the sauce, disguising the ketchup base.
Fresh onions will also be sweeter than the powder. When I do that, I put everything in the blender for a while, then warm it up in the saucepan to dissolve the sugar. _________________ Traeger 075 "Big Tex"

It looks to me like you have too much brown sugar. Try reducing it to 1/2 cup, add about 1/4 cup molasses and then add maybe about 1/2 cup Turbinado sugar to taste (you can find Turbinado sugar at most health food stores which helps prevent burning). If it were me, I would add some Worcestershire Sauce (Lea and Perrins is the best) but that is me.
I think using different sugars will help add some depth to the sweetness.

Reduce the vinegar, sounds like lot of sweet already, maybe go half with the brown sugar and half maple syrup? Up the spice by a third, add a few more cloves of Garlic and a pinch of salt.  |

this is what i did with your recipe. has the original amount on the left and then what i added after i made it...
.5C brown suga, added 1/4C
1C Ketchup, added 1/4 (should have added 1/
1/3C apple Vin, + splash
1tsp cayenne
1tsp chilli powder
~2tbl white onion (not powder)
2 gloves garlic
2 tbl molasses
1tbl honey
before i added anything the spice was there but had no sweet. added the apple to reduce a little of the ketchup taste at the time. it turned out pretty good and the spice has mellowed that i left it in the fridge over night. has a little sweet at first and then the spice kicks in after you have eaten everything. pretty damn close to what i was looking for in a pulled pork sauce. |
