As some of you are aware - although we cater, we do so selectively www.texasribwagon.com . We catered a wedding back in May and the Bride was kind enough to write a nice letter to the editor. BRIDE GIVES TEXAS RIB WAGON THUMBS UP
Dear Editor,
I would like to write this email to discuss the outstanding service that was given to me by a business in your community. The Texas Rib Wagon catered my wedding on May 9, 2009 (I know I have been slow on this letter....we have just been enjoying married life too much!) and they did an over the top job.
From my first contact with Brad Bradley via phone, he was friendly and overly helpful to my needs. We proceeded to email back and forth because I had a million questions for him, but he always promptly emailed back and was able to get all my needs met for the catering. He even agreed to make vegetarian beans for my hippy Austin friends!
The day of the wedding was wonderful and what made it really great was that I had no worries at all. Brad, and it seemed like his whole family, showed up early on the property at Leakey Springs Lodges and started smoking the most delicious briskets I have ever eaten. Barton, the groom, was like a kid in a candy shop with all the smoking equipment, and I was glad to hear that Brad and his son humored him by showing him around their operation and giving him peeks at of all the meat. That meant a lot to Barton as he was a bundle of nerves that day.
After the mariachis played, the food was served and everyone was digging in. Everyone kept coming up to me and saying that the food was delicious. The ribs and brisket were prepared perfectly and all the sides were wonderful. The homemade ranch really was a great touch and you can tell that you are doing a great job when my 13 year old nephew went back for thirds to make himself a huge salad!
There was also plenty of food so we had no worries about running out. My family and friends can eat too! Everyone was delighted the next day when I was able to prepare to go packs of brisket and ribs for everyone traveling back home. I ended up giving it all away and then realized Barton and I did not get any leftovers ourselves. I ended up finding some at sister’s house that next Monday and took some from her!
All and all it was a great wedding made even better by the outstanding service of the Texas Rib Wagon. I would recommend this business to anyone looking for great authentic Texas BBQ served with authentic Texas friendliness.

Congratulations on the great testimonial. I really believed it until I got to this line:

Seriously, nothing makes you feel better about your work than customers who take the time to voice their appreciation. I'm no caterer, but when I cook for my friends, their kind words mean so much. Especially if the ribs turn out great. _________________ Jimmie Ohio

It was funny when she asked for vegetarian beans - a person needs to understand the demograhics of Austin, Texas to appreciate her request - a hippy haven, even today!
She asked about our beans, we told her we make pinto beans, with pico de gallo, and salt pork, or bacon in some cases etc., along with chicken broth. She asked if we could make enough for 20+ hippies and drop the bacon/pork/chicken broth...yes we could, but we wouldn't be responsible for the flavor. Why make vegie beans and keep the brisket and ribs? we asked...she said after a couple of Margaritas they might weaken. The next day, as we were picking up our equipment she along with a couple of her hippies said "We broke out vegie mode last night, had the regular beans, brisket and ribs!" we all laughed as they started drinking Bloody Mary's...it appeared they needed it.
It really was a fun catering event, lots of positive comments, laughter and great time that we were invited to join. |
