Pulled Pork Chili a.k.a. 401 Chili

Here in Texas we make chili with our leftovers, not some silly brunswick stew Razz

Take 3-4 pounds of left over meat and chop. This is a pulled pork I did a couple days ago for my work lunches.


Put the meat in a large pot and add:
2 Whole onions
4 minced cloves garlic
2 15oz cans black beans
1 15oz can diced tomatoes
2 8oz cans tomato sauce
6 chopped green onions
4 stalks celery
1/2 chopped green pepper
4 cups water
10 Tbls chili powder
1 tsp pepper
2 tsp salt


Simmer for atleast 30 minutes on medium heat to meld the flavors together. Simmer down until you reach your desired consistency. I like mine pretty hardy so I simmered for about 1.5 hours. Enjoy!

Note: This chili is NOT hot at all, just a little bite from the chili powder. I've got three young ones in the house, otherwise you'd see some cayenne in the recipe!
