k.a.m. BBQ Mega Star

Posted: Aug 17 2009 Post subject: Tri-Tip, a new potato recipe and a great white sauce (pics) |

A couple weeks ago I was talking to Whitey about his white sauce for chicken, and when I tried it I loved it.
So when I cooked the chuck last weekend he had mentioned maybe adding horseradish to it,
so I asked him to come up with something. He did and it is great. Mrs K.A.M. also had a new
potato recipe we tried as well.
Here is the Tri-Tip seasoned with kosher salt coarse black pepper and rosemary.
Mrs.K.A.M.'s taters in the making, first slice them almost through and cook in the microwave till almost
cooked,then add melted butter.
After moving to a pan place on grill indirect for about 10min. then paint with more butter and a mixture
Parmesan, rosemary and salt, pepper.
Then after about 10 more min. covered we added some sliced Roma tomatoes.
Then recovered and cooked for 10 more min. then added some grated Mexican four cheese and cooked
for 5min.
Then on the Tri-Tip went.
I cooked it till an internal temp of 130° and pulled it, let it rest for 30 min. and sliced.
Plated up on a Bolillos roll with Whitey's horseradish White sauce, a salad, and Mrs.K.A.M.'s potato
(which is a fine tater). Whitey's idea is delicious, it even made its way on my tater.

Man does that look good! I like the idea of horseradish in the white sauce...I bet it was good. Lots of work on those taters but I'm going to have to try that real soon!

Well K.A.M and His "Bride" with some talk with Jane and a little input from Me came up with this..
We had Our first H.Radish sauce on Beef that We did and it Was a HIT!
Its was White Sauced Chicken 1/4s and a dash of on the beef..
Close up..
The sauce is real good on everything,Including the Spuds.
Right on and Hats off to the "K.A.M's..
These "Folks" kick Butt..

i love tri tip. what did you that of that S+P+Rosemary combo on the tri tip kam?

Well because I have to make stuff a little mellower than I like(The Kids and Jane) I used alot less then the K.A.M's did.
I really thought this was an outstanding hit with the Beef roast and it added something that was real neat to the chicken 1/4s..
Heres kindof where started from..
1/2 cup mayonnaise
1/4 cup vinegar
1/2 teaspoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1 tablespoon sugar
1/2 teaspoon lemon juice
2 tablespoons apple cider
If the folks that are overfor dinner with You like H.Radish then move it Up To K.A.Ms Monster Whitesauce.
And it is a hit on the taters,corn on the cob what ever it comes in contact with,you will love it.

Hey whitey, thanks for the recipie! I'm really liking the horseradish idea. I remember doing a horseradish crusted prime rib couple years ago. Loved the fresh grated stuff...real good flavor.
But anyway, between you and k.a.m. the food looks great! Two amazing meals! You guys are making me hungry all over again [/i] |

| My family loves the white sauce So far its good on everything including fish we use it as a dunking sauce for chicken too only bad thing about it is it never seems to last very long around here |

I havent tryed tri tip yet. I have found tri-tip steaks (kroger store) and tri-tip strips (sams) they are a new items in these parts. they run around $5.99# is this a good price? The white sauce you and whitey created is a must try here with and without the horse radish. After seeing the cuts in your tator i thought about this recipe

Thanks luckyduk, The Tri-Tips are hard to find around here that are affordable. Necron99 made a trip to Houston a while back and called me about some on sale so we got together and bought a few.
Andy Reese, you are right it is a fine sauce.
Thanks morick, The taters in your link look like these but those look peeled. Mrs K.A.M. got the idea from allrecipes.com , We changed it up a bit adding the Roma's on top and Mexican four cheese.

Outstanding cook k.a.m.,that tri tip has awesome looking color and those potatos look fantastic.I have never seen a tri tip on any of my local meat runs,I would love try one,I going to have to go see a real butcher I guess.  _________________ Horizon Offset (Marshall RD Special)
