Wifey’s Birthday and few people and Family are coming over for a get together on Sunday
So I get to Cook ‘’ Whoo Hooo ‘’ so I head to the Butchers and pick up a piece of Blade Steak ( Around 4 kilo’s = Around 8 pounds ) Rubbed the Beef on Saturday Night and whacked in the Fridge overnight
I started around 8.00 am this morning and looked out side
And it was absolutely Pi------ ‘’Err -- Persisting Down’’ haven’t seen rain in quite a while so I’m not complaining – just need to shift thing’s around a bit
I started by making this rub from this Site’s recipe = Jims good’s B.B.Q. beef Rub – with a few extra’s http://www.thesmokering.com/Recipes/GoodesRub.jsp

Made a big batch of Rub – I like this one


The Hunk of Beef – Blade Cut


Score the Fat Cap only


Mustard Slather


Rubbed and then whacked in the Fridge overnight


Another coat of Rub This Morning


Shifted the cooker to under the Pergola out of the wet stuff; loaded it up with charcoal and Some Mesquite Chunk’s – Never been able to get them here before so I am going to give them a try





And the Wet Stuff


Beef On


A couple Hr’s In


Sweets = an Apricot Pie




Some Root Veggie’s – baby Carrots, Fennel, Parsnip’s and Celeriac



Just going to sit back and relax for a While with a few Beer’s now

Will keep ya’s all Posted with the outcome

Brinnie,
Looks great can't wait to see the finished product. Really liked the apricot pie idea. Am going to try that here. Also, a nice selection of root veggies. Those veggies are available here but, I have never put them together like that. Will try that as well.

I don't really notice my restricted carb intake until I look at pics like that one of the peach pie. I wanted to mash my face right into the screen Cool

It turned out to be a very enjoyable Day, rained all day – but we need lot’s more of that here

I got a pic of my Tucker Plated Up – Every thing else was disappearing Fast!!

And this is about all of I seen of the Birthday Caked that was baked by my Daughter and my 3 year old Granddaughter

Shaymus - Thank you - I liked the Mesquite a lot, I use River Red Gum Here most of the time and the Mesquite is very similar in tast, but with an extra bit of Bite Cool
