How far do the cooking grates need to be above the fire in a UDS? I've seen 24" mentioned in several threads, but is that measured from the top of the charcoal basket or from the bottom? With a 10" tall (or more) basket, the distance from the lit coals to the meat could be different by several inches depending on how long of a cook you're doing and therefore how full your basket is. It seems to me like measuring from the bottom of the basket wouldn't necessarily mean a whole lot because of that. Appreciate if somebody can clarify how this all works, in case I ever get around to actually building one of these things.

I'm building one also. The first grate needs to be 24" from the bottom of the charcoal grate. The charcoal grate needs to be 2 1/4- 2 1/2" off the bottom to allow ash to fall away from the coals. So if you do the math:

24" + 2 1/4"= 26 1/4" from the bottom of the barrel to the first grate.

I am setting mine at 26 1/4 and 30 1/2. I am not using a web lid. I am using the lid supplied with the barrel. If you use a 22 1/2" grill lid you can bring the top grate almost all the way to the top of the drum.

I've seen where the grill grate needs to be 23 inches away from the heat source. I didnt worry about the exactly measures, I just roughed it from where the top of ten lbs of coal in my basket sat to the grill grate...I dont think the other numbers are as relavent. You can be closer, but then you would need some type of diffuser. (a plate of steel, liquid pan, sand pan...any type does it)

I believe the BDS is 24", but I shortened mine to 23" from the BOTTOM of fire basket to make a little more cooking space. My fire basket is only 6" high, not sure why so many use those tall baskets, mine will burn 10-12 hrs using lump. Good luck.

... and after three innings, Bottom Of Basket leads Top Of Basket, 2-1....

I kinda estimated mine from about where the coals will sit in the basket for a long cook to where I wanted the top grate.
