| I'm preping for my first big slab O meat smoke tomorrow.....I have a good idea on temp and time, but my two questions are should I trim the fat and should I inject it?? I also paid $2.99 per lb was that a decent price? |

1st brisket just smoke it fat side down, minimal trimming, no inject.
A good price for a packer brisket is less than 2.00 in my area. Closer to 1.50

| That's what I was hoping....really want to get the heat / temp right and the texture....add flavor as I get better!! |
