Any advice on seasoning a new cooker would be appreciated.

Im not sure what equiptment your using but most spray the inside down with a coat of pam. Pam is canola oil in a can so i just use a disposible spray bottle and some clear fry oil and sray mine down not heavy but enough just to cover the surface. Think of it like seasoning cast iron cookware if you will. After that heat up your smoker for a couple hours so the oil can carbon on the metal surface. I go with 350F

Yeah, what he said.. I just used vegetable oil in a spray bottle. Hosed it down inside really well. Brought the temps up (pegged my gages) and let it burn out. Next day went in and looked for any dry looking spots. Hosed them down and brought her up to around 350 again. Let her burn down. Next day, just a light coat on the grills and cooked in her.

Oh, between I wiped up any puddles that may have settled anywhere.

papabuck, morick and purplewg plus me that is how I season mine. The Pam is a bit neater I just use the el-cheapo stuff it works great.

I like using peanut oil, but that can get expensive

I ALWAYS use pure lard. Get a block of it (like butter) and smear it around on the inside. Fire it up and lay the smoke to it. I run mine around 300-325 for a couple hours. Seasons up mighty fine!
