If you only had one more opportunity to smoke meat..... what would you make?
I'm moving to an apartment, so the beloved UDS is going into storage for a while. _________________ UDS |

No matter how much you stare at that bug, it still fools you when you look away and look back.
I've yet to do a brisket, so I probably won't do that. I'm sure I won't get it just right, and I won't have a second shot to rectify it.
I'm leaning towards doing two butts (load up the freezer), a rack of ribs, and some chicken once the ribs come off. I usually cook poultry at a higher temp than the butts, but I'm looking for a smorgasboard here. _________________ UDS |

Aww man, if you can do a butt then do a brisket. What a way to put the UDS up for a while, with a 1st time killer brisket coming off of it. _________________ Lang 84 Deluxe Long Neck w/Char Grill

You make a strong point. Maybe I will try a brisket. Don't they take 14 hours or something like that? _________________ UDS |

| deersteak, why not go out in style with a 2 day smoke? Do some butts and brisket. When they're done throw on some ribs and beans! Eat what you can and freeze the leftovers to ease any Q withdrawls down the road... |

I third the idea of stocking up on BBQ. You should cook all you can everyday until , vacuum seal and freeze!
I have found that most things made on the smoker reheat nicely in a crock pot with a little water. _________________ 18.5" WSM

Dude I am sorry for your loss! If that was the case I'd have to do spares and butt with some smoker beans.....then find a nice storage unit in a back corner that I wouldn't mind sitting at with some beer while the UDS was doing its thing. _________________ http://kchawgskitchen.blogspot.com/

I am with k.c. hawg, I would find a storage unit with room to have a tailgate party while the uds does its thing, or try my best to bribe the apt mgr with food from that last meal. _________________ Propane is for frying, not Que!

We looked at one apartment with a detached garage that was far enough away that I might have gotten away with it. The one we settled on though has an attached garage that is right amongst everything. Oh well. There is a pretty nice community propane grill that will have to tie me over.
I have a deer ham in the freezer that I will definitely cook to get it out of there. Other than that I will be purchasing, so I will probably do a variety of stuff.
The silver lining in this is that the lake is closer to me now. So one of the other hobbies will be benefiting from the move. _________________ UDS |
