Posted: Jul 26 2009 Post subject: Pickled eggs and beets |

1 jar beets
1 cup vinegar
1/2 tsp salt
1/4 c sugar
1 thin sliced onion
6-8 boiled eggs
Drain beets reserving 1/2 c juice
put eggs, beets and onion in large jar
combine beet juice, sugar, salt and vinegar in saucepan
bring to boil till sugar is dissolved
pour over eggs and beets
refrigerate overnight and enjoy.

| I did something like this but I added scotch bonnet, habernera and another pepper to fire them up some. Canned them and let them cure on the shelf for a month or so. They went really well with a cool beverage. |
