I have been hankering some Beer Can Chicken (BCC) lately so I brined a bird last night in a basic brine of water, salt, spices, and sugar.
I like jabbing a fork in a lemon over and over and sticking the lemon down the bird's neck. The lemon then flavors the meat throughout the cook.
This is one of the rubs I picked up in Hawaii a few months back (Hawaiian Smoke) and man does it smell good. The ingredients are sea salts, cane sugar, garlic, black pepper, natural smoke flavor, and other spices.
On the grill!

Basic Brine
1 Gallon Water
3/4 cup kosher salt
3/4 cup sugar
2 Tbl pepper
2 tsp cayenne pepper
several sprigs of thyme
Update: about an hour into the cook.
Update: Finished
Resting.
Slicing the moist bird.
About halfway into slicing.
Plated....man o man was it flavorful. I think I will have to order some of that rub when its all gone.

jeepdad, awesome looking yard bird my man That no doubt has to be the moistest looking bird I have seen in some time. Sliced up beautifully, awesome skin color, and what a fantastic plate up with the corn, mater's, mashed taters, and Apple sauce. Nicely done my man  _________________ Always remember slow and steady wins the race.

jeepdad I bet the Hawaiian Spice rub was incredible
I like the way you toothpick closed the neck, I've put onion & lemons inside
the cavity before...but never thought to close it up as you have. Will have to try. The plated results look delicious. You always take great photos.

jeepdad, Mighty fine looking chicken you got there. Tasty pics and ideas as always.
