Ok, lets be honest cornbread in the traditional style is not your typical cornbread mix you buy at the supermarket. Here is my corncake recipe that is sure to please. It comes out more like moist cake then bread.
Ingredients:
2/3 cup butter or margarine, softened(I use willow creek soy because I have a bad dairy allergy)
1 cup sugar
3 eggs
1 2/3 cups milk(I use almond milk here, allergy)
2 1/3 cups all-purpose flour
1 cup cornmeal
4 1/2 teaspoons baking powder
1 teaspoon salt
1. In a mixing bowl, cream butter and sugar. Combine the eggs and milk. Combine flour, cornmeal, baking powder and salt; add to creamed mixture alternately with egg mixture.
2.Pour into a seasoned/oiled 6 quart dutch oven. Bake, with lid off, at 400 degrees for 22-27 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.
This cake comes out super moist and puffy. After it is done baking make sure and take out of the cast iron dutch oven. The cake will pick up the cast iron flavor and if allowed to sit overnight it will ruin the cake with a metallic flavor. Enjoy!
