Just wanted to drop a note and let everyone know how helpful this site has been as I began my new/first smoker build a week ago. I have been digging around here for a few weeks and hit the gold mine when i discovered the smoker ratio chart, you guys rock!
I have been an avid cook for the last 10 years or so and a backyard Qer for the past 5. currently I cook on a 30"x14" offset cooker. the new tank i just picked up (300g propane) is going to be transformed into a reverse flow with stainless work surfaces, propane ignition, swing out weber, storage, wood rack, fry stations, etc. I am photo documenting the process and will post pix in the next week or so.
I also just formed a KCBS and ILBQS team, Risky Brisket, with my best friend who owns a BBQ restaurant in the same town. hopefully we should have the rig done in the next 3 weeks so we can hit a few contests before Chicago turns into an ICE BOX!
