Just wanted to say Hi and that's it's nice to be able to talk BBQ. I live outside of Buffalo and have to spend a great deal of time explaning to people that I am not grilling I'm BBQ ing. Not only do I love to Q I also like to make my own homemade sausage and to cure my own meats. (Ham, Bacon, Canadian Bacon etc...) As I type this I'm smoking some Polish Sausage for Easter. My wife is very supportive of my obsessions.(just got a heavy duty smoker) and my kids ages 4&3 love to help out also. We are planing ot enter our first comp (Oinktoberfest) and will be competing as the Swine Syndicate. _________________ Swine so fine it's criminal! |

Welcome Wittdog!
Glad to see there are others out there who like to make bacon. Life without bacon would be ....................like lobster without butter. I don't do very much Q, however I do enjoy smoking. I make sausages and cured hams, salamis, and other fermented pork delights. I'd be interested in sharing experiences /recipies.
