Just wanted to say Hi and that's it's nice to be able to talk BBQ. I live outside of Buffalo and have to spend a great deal of time explaning to people that I am not grilling I'm BBQ ing. Not only do I love to Q I also like to make my own homemade sausage and to cure my own meats. (Ham, Bacon, Canadian Bacon etc...) As I type this I'm smoking some Polish Sausage for Easter. My wife is very supportive of my obsessions.(just got a heavy duty smoker) and my kids ages 4&3 love to help out also. We are planing ot enter our first comp (Oinktoberfest) and will be competing as the Swine Syndicate.

Welcome Wittdog!
Glad to see there are others out there who like to make bacon. Life without bacon would be ....................like lobster without butter. I don't do very much Q, however I do enjoy smoking. I make sausages and cured hams, salamis, and other fermented pork delights. I'd be interested in sharing experiences /recipies.
