Just put'em on. I used a very simple rub made of salt and cracked pepper to sit overnight.




Bottom rack.


Top rack.


Gonna try this hot sauce on a couple racks.


And this on the other racks.

Jeepdad,

Those look mighty tasty already. I decided to smoke some spares tomorrow, as we have steaks for the grill tonight. I am looking forward to how that hot sauce works on the ribs. I love the heat, but usually people I talk to want their ribs a bit more subdued.

Those are looking good!

I also did 4 racks, St Luis trimmed like you did. Did the usual 3-2-1 and they just came off. We're just waiting for our guests to eat!

HURRY UP! I'm HUNGRY!!

Usually my ribs pull apart easily, but if you pick up one end they won't fall apart. These are are BARELY holding together, but nice and moist. Fortunately I cut the racks in half before cooking otherwise I'd be pulling them off the smoker rib by rib.

Ah! they just pulled up! Let's eat!

Your killing me! Those look fantastic! Great color, and the sauce looks perfect.

It's brats on the kettle for us tonight. I got a 1-1/2 lb. chuck roast to put on for sammies later this week. Slice and reheat in au jus, mm-mm!

Waiting for the finish. Don't keep us waiting too long.

Thanks k.a.m., LordCindersoot, nes_matt, gibber, Doc1680, Beertooth, and mwillis.

The ribs turned out great my guests loved them. The Apple Barbecue sauce was like so many others. It was mildly sweet and a decent flavor. Once the jar is through I am not replacing. It was average.

The Moonshine Madness was a different story. I tried it before putting it on the ribs. I stuck my finger in and tasted it. It had some bite to it and what I really liked was it lingered for a long while. Not crazy hot but you knew it was there. On the ribs though it didn't have the same heat...it has a smaller kick but not like tasting it straight. I like it I just had to have a bowl near by on the supper table to add some as needed. I will likely reorder it again.

Bone Sucking Sauce.


The Apple Barbecue Sauce. On the first two slabs my Mom gave me her old electric knife and it cut the ribs perfectly. When i started on the Apple ribs it gave up the ghost and died.


Potato Bud Caserole.


Fruit Salad.


Good ole corn on the cob.


Man it was a good meal.
