I am planning on smoking bone in chicken breasts this coming weekend. I've never doen this before. I smoke whole chickens on a regular basis. They usually take 4 to 4 1/2 hours at 225 - 250.
Do the breasts take a shorter period of time to smoke?

I would say maybe an hour or so. Cook to temp tomake sure they don't get too dry. 160* works for me. I also like to coat them with a mayo/vinegar or mayo/lemon juice mixture. Under the skin too. Dip them in it when they come off the smoker, ala Big Bob Gibson. _________________ OK Joe Longhorn

Hey Trilbysdad, you gave me some great advice on the chickens- thanks! They turned out great.
I did some breasts the other day and they were good too- I coated them in olive oil and rubbed 'em with garlic salt and a little pepper and then put 'em on at about 225 for 45 minutes in heavy smoke (I admit to squirting them once with an apple juice wine soy sauce mixture once) Then a quick sear with a mustard/wine base, coupla minutes only... good.
