Started on the 3rd, cooked a brisket flat and a butt. I used red oak and a little bit of maple for the smoke. Foiled the butt for the last hour or so and foiled the brisket for the last 3 hours. Pulled both at over 200.
Here they are slathered up and ready to go:

Notice a jar of roxy's freebase being dipped into on the table. I love that stuff.

I went a little light on the BBQ cause I'm converting people to that aint used to this kind of cooking. When I went back for seconds, the que was gone though.
It also wouldn't be the 4th without some of these:
The brisket didn't have as much bark as I would have liked, but was like butter. Next time I think I'll try it without foil, and maybe stick a pan under the grates to collect the juices instead. I need a new pit too cause this one is too small. Sorry no finished pics on the ribs, I always time them to come out a couple hours after dinner is served and by that time my brain wasn't working properly so I forgot to take pics. All in all it was a fun 4th hope everyone else out there had as much fun as I did. |

gibber, My oh My what a spread Everything looks awesome, That Butt had a beautiful bark and pulled real nice, and the brisket looks mighty tasty as well, and then burgers, and dogs, kabobs, and ribs. You pretty well covered the spectrum. Nicely done my man.
And I would have been all over that pico with some flour torts. _________________ Always remember slow and steady wins the race.

C.B., Thanks it was a ton of work but well worth it.
Whitey, thanks but I unfortunately woke up on the couch the next surrounded by empties. At least I didnt lose and fingers handling the explosives.
Thank you Northsider, a little too much fun judging by the way I felt the next morning.

Stringbender128 thanks, most of it got eaten too there was only a couple of sides leftover.
Thanks JamesB, I cant wait for the next time I get to fire up the pit.
k.a.m. thanks, I love the pico, a buddy of mine was bringing some salsa fresco that he makes without any peppers in it. I couldnt let that slide so I made of some pico and we had a mini salsa throw down.
Thanks hunter74, the only thing better was eating it.
