Hey all
New que'er here -- cookin with a moded ECB
From what I've gathered in this forum, the ABT's and Fatties are a must. So I am in the process of crankin some out appetizers for my friends party later this afternoon.
had some issues getting my fattie assembled. i put too many goodies in the middle i think. eventually i think i got it to a point to where it will be stable on the smoker.
crankin along at 250 right now, about to start putting my abt's together.

J-Man, sounds like you have the same problem I have Mrs.K.A.M. just looks at me and shakes her head. If I have a pot of stuff some how its going in there. Did you wrap yours in Bacon? That helps hold em together. I look forward to seeing the cooked pics  _________________ Always remember slow and steady wins the race.

Everything turned out great! The fatty held together without bursting, and tasted great. The ABT's may have been slightly oversmoked, but people still enjoyed them. The fatty got to 165 in about 4 hours, and I had the ABT's on for about 1.5 hours.
The only issue was ... I had never met most of the people at the get together I took all of the food to -- and it turns out most of them arent very adventurous eaters. The few that like jalepeno's mowed down the ABT's, but most of the folks there opted for a second burger rather than the fatty. I also did a few extra spicy ABT's for myself, mixing in some Blair's Ultra Death sauce with the cream cheese.
Good news for me though -- I have plenty of fatty leftovers! This morning I heated up a thick slice with some extra pepper jack on top and put it on a bun ... very tasty. It was especially good for my hangover -- I logged about 12 hours of drinking yesterday
The goodies I put in the fatty were: chorizo, onions, pablanos, and pepper jack. They had a much nicer form before the initial roll failed and I just had to shove things back in. I ended up having to take out some of the cheese and onions. Also -- the picture of the sliced fatty wasnt taken till much later in the night - I forgot to take one right when I sliced it.

I think if you put .jpg on the end of each of those it will work

figured it out. i think i need to get a photobucket acct ... that will be easier |
