I walked outside a few mins ago to check the temps and at first glance it looked like things had cooled down to 50deg. I opened the hood to find a grease fire that had spun the dial around.

Moved the offset cooker the other day and did not check to see if the incline would let the grease drain to the correct side of the cooker. Shocked Needed a few shims.

DW, now thats hot Shocked You might consider putting a 1/2'' to 1'' bridge between the fire box and cooking chamber.

well, the temp came from a flaming brisket right under the temp probe. Luckily I was standing outside when I noticed the spike in temp. Charred it a little but I got er put out in time.

k.a.m, your correct, I have to do something with my offset cooker. I need to build somesort of tuning plate and a way to shield the grease from the firebox side of the smoker. My smoker is a Brinkmann but I don't think they make it any longer. It looks just like the Horizon 16" Ranger Backyard Smoker.
