I smoked a 6 lb. butt yesterday on my BGE. Overall, it turned out pretty well. I only had one problem.
The portion of the Butt that was below the bone and closest to the fire turned out great. It fell off the bone and tastes fantastic. However, the portion that was on top of the bone was much dryer. It tasted alright but didn't come off the bone easily and was not easily pulled. What did I do wrong? I kept it around 220 the entire time. |

You might have needed to cook it just a little longer.
What was the internal temp when you pulled it off the egg? I like to shoot for 200ish, or when my temp probe glides right in(check it in several spots). Did you foil it while cooking....after cooking? How long did you let it rest after cooking? _________________ Mike
