Got a 9 lb. prok butt out of the freezer and let it thaw...
Mustard slather....
Rubbed down with McCormick's Sweet 'n Smoky...
after about 6 hours...
Just off of the grate after 10 hours...between 200-250 most of the cook..had to fight some wind issues and some ash build up in the CG Trio..
after an hour rest...let the pulling begin
second view...
Money shot....sauce is Roxy's Carolina, with some mods...
All in all, I think it was a great cook. Never did one before and I think once I get used to some more fire management, I will be golden.

I liked it, but more importantly, my darling wife liked it. She is JUST getting to where she will try spicy foods, and I didnt want to scare her off by loading it up with too much heat...so the Sweet n Smoky worked great. Looks awesome bigpaguy! Glad to hear about that McCormick's I have used the Cinamon Chipotle for a while and wanted to try something else. now, where is my plate? _________________ Just gimme a hunk of meat, a good cigar and a full cooler, and I'll be out of your hair until dinner! |

Dang.. sitting here at work, "listening" to a conference call (yeah, right...) killing time, and starving for lunch. So I come to the ring - if I thought I was starving before, this post didn't help any at all. Looks awesome. I think I'm headed for a Q place for lunch.
