Blowing Smoke that is one of the finest pork loins eyes have ever seen...that being said....it's a damn good thing you took pictures cause you will certainly have Long Island amnesia. Been there and done that. When you regain consciousness the neighbors will have finished it off and your wife will deny that you ever cooked it.
Beertooth good work my man...that is a beautiful loin......you guys have gotten me fired up for my cook tommorow. I'd l;ove to dig into a slice of that....too bad we aren't set up on a couple of acres on the water, taste testing and decorating blowing smoke while he is in Long Island. |

Sorry guys we had a power failure. Here we go shrimp, crawfish, and andouille sausage Etouffe stuffed pork loin.
Started out with a 3.5lb loin
Here are most my fixings I am not very organized without Mrs.K.A.M.
A nice medium roux and veggies along with the andouille.
The broth and rotels.
The Etouffe simmering with 1lb of crawfish and 2lbs of shrimp.
A little rice and Etouffe and ready to roll.
On the WSM all woven up.
Resting.
All sliced up notice all that goodness.
And plated up with a little Etouffe on a bed of rice, fresh tomatoes and cucumbers, with a glass of chianti which I deserve.

Excellent looking loin k.a.m.,I was wondering when someone would stuff shrimp into a loin, how did it taste k.a.m. ?Im also a big fan of rice stuffings in loins, they seem to go well with rice. _________________ Horizon Offset (Marshall RD Special)

thats some funny stuff right there.
i would go find some condoms and lube and leave em "nearby", nothing like long islands to make you sleep with a "pig". |

Thanks C.B. I have been wanting to do a tenderloin like this for a while but the double cook is tough and this was a great chance to try it. I have to say it was everything I had hoped for, I kept wondering if I open the cooker and found it had unloaded on me what I would do I was lucky it held. _________________ Always remember slow and steady wins the race.
