Rolled up my first fattie a buddy of mine bought me all the ingredients as he wanted me to make one. I used a large log of breakfast sausage and almost 2 pounds of bacon. Was stuffed with cream cheese, mexican cheese and jalepenos and put on the WSM with some hickory and smoked at around 250. I removed the water pan after the fatty seemed done to crisp up the bacon some.

It broke when I went to take it off.

some pork chops made it way to the WSM

All in all it was a huge hit, everyone loved it and I must admit I thought it tasted alot better than I expected.

r6abusa great looking fattie! I love the jalapenos and the bacon is nice and uniform. And the pork chop snack has me wanting one. I love pork chops.

Shocked Holy crap. That just reminded me I have one left in the fridge. Very Happy Pork chop for breakfast!
