Mrs.K.A.M. wanted to Cook on her UDS on Father's Day and we did but she was so busy with sides I manned her cooker most of the day, it was a great cook. Mrs.K.A.M. started early Saturday making Pinto beans, Pico, Roxy's Mustard sauce, boiling eggs for tater salad and scotch eggs, and smoked some red taters for my tater salad. Sunday at 4:45 A.M. we put on a 9lb. Butt. Mrs.K.A.M. took a nap then started on dirty rice, and made up the tater salad and built some ABT's with peppers from our garden, and rolled scotch eggs and wrapped some eggs with bacon, (her new idea).

The UDS charcoal basket loaded and fired up with Pecan chunks, 4:45 A.M.

One 9lb. Butt rubbed with Head Country and a mustard slather on the cooker.

At 11:45 A.M. first peek and looking happy.

Added the scotch eggs at 1:15 P.M.

At 5:15 P.M. The Butt had reached 195° and I had already pulled the scotch eggs and added Hot Dogs. The Butt was wrapped to rest.

ABT's on the UDS and Kettle along with Mrs.K.A.M.'s new bacon wrapped eggs.

Here is the Butt after resting, a clean bone.

After pulling, this one was truly nice to pull.

A pan of scotch eggs.

Garden fresh ABT's with chorizo and cheese stuffing, and bacon wrapped eggs.

Deviled eggs my daughter made.

Smoked potato, tater salad.

Dirty rice.

Pinto beans.

Roxy's sauce.

My plate for the day, pork on corn torts and pico plus sides, and notice my gift, a Maverick ET-73. Very Happy

Stick a fork in me I am done.

My daughter also made a New York cheese cake with apple topping, thats my girl Very Happy

Thanks k.c.hawg, I do like my Modello's and corn torts Very Happy

Thanks whitey, your crazy man in a good way my friend Laughing I used to tell my son don't let these wrinkles fool you boy they are road maps that you don't want to travel Smile

Thanks J0K3R-X, I will serve it up any way you like it my friend. I did enjoy cooking on this drum, I just need to remember who I built it for Laughing

Thanks wyrman, scotch eggs are boiled eggs wrapped in pan sausage then smoked. Now Teleking has us hooked on wrapping them in bacon as well and then on the smoker they go. The bacon is a real treat on these for sure. Very Happy

Please tell me you had an army over for dinner! That's a ton of food for sure! Everything looks so good!

I can't believe both of you were up at 4:45 am! That's dedication!

I'm really thinking about ABTs. Never had them before. Haven't had deviled eggs in a long time. And anything wrapped in bacon is a must...your making me hungry which isn't good as its past 10 pm!

Great cook to the both of you! I'd say I hope you had a great Fathers Day but I already know you did!

Thanks samson, we were up at 4:00 A.M. to start the cooker it made for a long day. We sent home lots of left overs with the kids for the next couple of days. Very Happy The ABT's go well with anything, we have been using sweet banana peppers for the grand kids and the adults that do not like the heat.

Thanks C.B., once I figured out all the quirky problems I was impressed by the way these cook. That pic was at about the time my eyes were nearly closing for the day Laughing

Thanks troystr68, I love the chorizo and cheese mix Mrs.K.A.M. makes I could eat it on crackers. Very Happy

Thanks Robert, I was just telling Mrs.K.A.M. yesterday next weekend no smoking I need to rest Laughing

Thanks HarvestMoon, Mrs.K.A.M. makes awesome dirty rice, its a family recipe from my sister that was given to her by my mother. She adds Andouille sausage in ours for a little smoke flavor.

Thanks Rojellio Es Caliente, scotch eggs are boiled eggs with pan sausage wrapped around them and then smoked. Teleking has got us hooked on wrapping the outside with bacon as well, this way is delicious.

Thanks morick, its hers, its hers. I know its hers Laughing
