Hi all,
I'm having a "pork fest" party next weekend and am doing some butts, ribs, fattys, and armidillo eggs. Trying to get some new ideas for fattys.

Well since I view sausage as a breakfast item, this is mine.
The big old slab of flattened sausage.
Some chopped onion and green peppers inside.
Some scrambled eggs inside.
A touch of garlic powder
A few slices of pepperoni
and of course all this wrapped up in bacon. _________________ The Wild Pig build.

Or Greek Style
Fill with sun dried tomatos, Greek olives, feta cheese, fresh baby spinach, Pancetta, and a little Greek Dressing.
Pizza style:
Pizza sauce, pepperoni, peppers, onions, pizza cheese blend, wrapped in bacon.

Yes I have and it is really good also. You gotta make sure you have the whole thing sealed really well or the dang cheese will run out.  _________________ The Wild Pig build.

Mantipp, one thing I do now when I cook the eggs, instead of chopping them all up into normal looking scrambled egg pieces, I just cook the scrambled egg batter like a big pan cake. It makes it easier to roll up in the fattie. Another thing I learned is to let stuff sit and cool a bit before placing in on the sausage. The sausage wants to get really messy with hot stuff on it.  _________________ The Wild Pig build.
