This is just a heads up for any newbies. On the sausage maker site they suggest using 1 cup in five pounds of meat, on Lem Products they suggest 2 tsp per pound of meat. One cup in five pounds of meat is the equilivent of about 9 1/2 tsp per pound of meat, if you use that much soy you're going to need a bread making machine instead of a sausage stuffer. I tried it and just threw out ten pounds of unedible summer sausage.

When you mesured it out how did you do it? Did you just scoop it out of some thing resulting in "packing" it in to your meausering cup? You need to mesure it like you do flour. You need to fill your measure cup with a spoon or some sort of scoop. if you "pack"it in to the measure cup you will always end up with way to much. Hope this helps.
