When you trim the brisket off the spares for the St Louis cut, what do you do with the trimmed meat? I'm thinking it would be great for smoking and adding to other dishes but wanted to see what others have done with it. _________________ Char Griller Smokin' Pro |

| Usually I use the scraps and what not for snacking while cooking or I'll toss them into a thing of beans. |

Yep.
About 3 hrs. Then I usually either chop and bag or chop and do them like burnt ends. Mix them in a pan with some sauce and toss them back on the smoker till the sauce thickens. Yum!!! _________________ Love the voodoo that Q do.

Ditto on Samson's reply. That makes a good snack while cooking or in the beans. _________________ Peoria Custom Cookers 24x48 Backyard Cooker
