Pork Spares Question

When you trim the brisket off the spares for the St Louis cut, what do you do with the trimmed meat? I'm thinking it would be great for smoking and adding to other dishes but wanted to see what others have done with it.

Usually I use the scraps and what not for snacking while cooking or I'll toss them into a thing of beans.

If they survive a hungry pitt boss they go in the freezer for the beans on the next cook.

Yep.

About 3 hrs. Then I usually either chop and bag or chop and do them like burnt ends. Mix them in a pan with some sauce and toss them back on the smoker till the sauce thickens. Yum!!!

They also make good pulled meat if you cook em a bit longer.. Nothing like a pulled rib meat sammich.
