I have limited space to work with at this point and I don't want a second apparatus. I have a very nice gas grill with a side burner and a buddy with a bomber welding setup on his truck.
I want to install a sidecar firebox on my gas grill with the side burner that I never use to burn all the AWESOME wood scaps that I generate from my carpentry business (hickory, alder etc.) Also other chips that I can buy or get from my family.
I know I am not going to get a very good seal for a smoke chamber with using the grill at this point but anything has got to be better than putting a small pie tin over the flames with some wet chips in it.
I would also like the ability to do some cold smoking for fish etc.
Any ideas? |

With a smoker, whn you open the cooking chamber door you get smoke, you get steam, you get a a wonderful smell, and a warm satisfying greatness to it all in which i think you will find very difficult in a gas grill.
If you have a buddy with a, "bomber welding setup on his truck" maybe you could get rid of the frame of your gas grill and add a side table that you could install on your smoker that will accommodate your gas grill and there you have it ," the ultimate setup".
Cheapest solution would be a UDS |

Right, but most of the time I am grilling and want some good smoke flavor.
Elk steaks + High heat and fast cook = deliciousness.
Elk steaks + smoker + grill = Toughness & waste of time.
Those little lame-o wood chip trays are worthless. |
