well i'm going to cook ribs for the first time today WITHOUT foil. i decided to try it this way, and i will be spritzing every 30 minutes with an apple juce/cider vinegar concoction. i'm using pecan wood and figure about 7 hours on the spares, and 5-6 on the babybacks.
spares un-trimmed
trimmed to st.louis style
spares rubbed down
nice rack of babybacks
all rubbed
just put the bb's on, 1 hour on the spares and rib tips
3 hours on the spares, and 2 hours on the bb's
rib tips are done
rib tips chopped and ready to go into the beans- i forgot to take a pic of the beans
5 hours on the spares, 4 hours on the bb's, added some bacon and maple sausage, and the beans are catching all the drippings

| Looks excellent. My SLS usually end up around 5/6 hours...Which did you like better? BB's or the spares? I dig the spares personally not to even mention the price |

those look incredible! If you were only doing 2 racks of baby backs would you still cook them for 4-5 hours or would you cut the time in half? _________________ Learning how to work the smoker..... |

thanks jeepdad, i think i'll go foilless from here on out as well
thanks golfergal, i would still go around 5 hours, but again, there done when there done, i use the bend test as do so many others.

Those look great!
5 hours seems like a really long time for any cut of pork ribs to me...
I St. Louis'd 3 racks on sunday and they were done in 3 hours at 225.
The tips were done in about 2. |
