Hi All --
I've been lurking for months and finally decided to register. My BBQ pedigree reflects a melting pot of varieties.
I'm a native of Kansas City (I'm a Bryant's man) so I grew up thinking BBQ was all about the sauce. Through the years, though, I've been to Memphis a number of times and developed respect for the dry rubs.
I now live in St. Louis, whose BBQ lacks identity in my opinion (the recently-defunct Super Smokers was good, but too commercial for my liking).
Anyway, I now like to use a dry rub and then "paint" some sauce on after cooking is complete so that it can be absorbed back into the meat. I have a Brinkmann SNP Deluxe for now and I'm familiar with some of the basic modification, i.e. baffle and exhaust. I'm looking to construct a charcoal box, though, and I'd appreciate any blueprints / plans / suggests anyone may have.
