PART I
The weekend started on Friday with a small Catering gig where I cooked 4 Butts for a neighbors 50th B-Day party. While going to the store that day I found Tri-Tip!! While this may not seem like a big deal to alot of you here, this is the first time in the history of N.E. Indiana tri-tip has ever been stocked in the meat case! I had to buy. Later that evening I took off to my parents lake cottage for the Holiday weekend. Saturday's feast consisted of three racks of spares, a pork loin, and two turkey breasts. Here's the pics...
I got to give credit to kickassbbq for the method in which I cooked these butts. 350 degrees for about 5 1/2 hrs. Seriously, if you have to get something done real fast, and your cooker can consistantly run those temps, It's definately the way to go! (don't tell my wife though )
Raging fire to get that high temp I need
Still need thin blue smoke
1.5 hours
3 hours
5.5 hours done!
Pulled
If I got the temp that high I might as well through the tri-tip on instead of grilling, right? WRONG! I cooked it to much for my taste, it was good just a little done for me.
4.99/lb. not such a deal, but who cares?
Simple on the seasoning, EVOO, Black pepper, crazy janes mixed up salt, and a garlic pepper grinder.
On the cooker
143 degrees
Cut up and put on a tort

Nice Job. 350 I will try that for sure.I did 2 13 lb briskets and a 18 lb shoulder last Monday finished everything in less than 10 hours (cook time ) ran My Lang @ 300 turned out like You said Awesome.Nice Picture of the fire by the way

Ahhhhhh a relaxing time at the lake. This was my view on Saturday...

Dude... That has to be some of the best looking BBQ I have seen posted in a while. Great colour and it all looked like it as cooked to perfection..
Well done.

Too bad you can't put the cooker on the boat, or a real big
uke intertube and float and fish.
All the food looked really great. And thanks for posting

Sirsmokealot, part one was looking mighty fine but part two rocked my man That is an awesome cook, and I love y'alls coozies they are cool . Nicely done all around.  _________________ Always remember slow and steady wins the race.
