Two weeks away from opening up and the Old Hickory just arrived last night. Can't wait to toss on some ribs and feed the construction crew for all the work they have been doing over the last two months getting this 1882 historic hotel building ready to serve BBQ from the Ole Hickory and pizza from our imported wood-fired pizza oven.
So many details to get open and the list keeps getting longer not shorter! |

Cool, I am interested in your wood-fired pizza oven, can you post Links, details???
I am assembling a business plan for a restaurant that will focus on wood-fired everything the only gas appliance will be a stove and fryers. So far the equipment list is heavily dependent on products from J&R manufacturing, and "Wood-Stone" out of WA state. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

| I got an EL-EC since it is one of the smaller units and I will be selling pizza's, steaks and pasta so didn't think I needed a larger one. The pizza oven comes from Mugnaini, they import it from Italy. I looked at a lot of them but the Mugnaini one seemed to be the best one out there for what we want to do. There are others we looked at but I really liked the way this one kept all the smoke inside the cooking chamber and was UL listed. Most of the other models come with gas or infrared help and the wood-only ones don't really measure up to the Mugnaini models since they are built in Italy and are only available in wood-only models. |

You got the same exact model I bought. I love my Ole Hickory, I just wish I would've got a bigger model. For now it is fine but if the business keeps growing I will need a larger one before too long. This pit makes my life so easy. I can't say enough about it and the company. Top notch all the way around.
