does anyone dry their own sausage at home? Any safe ways to do it? i would love to get some ideas.

There is great information on how to do it safely at www.sausagemaking.org and at a site by run Len poli.
You will need cure #2 (Slow acting) as opposed to cure #1, a suitable lactic acid based fermenting culture, properly controlled temperature, PH testing equipment and proper humidity to do it safely. it is a little more involved that what most people think. Did you know the name Botulism is derived from the latin word for sausage, and for good reason!
I am in a climate where I can do it in my basement in the wintertime with the help of a small heater, humidifier, and a hygrometer, humidistat, thermostat to keep the conditions correct _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |
